Breakfast Pizza

Despite breakfast having many options, in terms of what there is to eat (french toast, granola, corned beef hash, omelets, yogurt…etc etc), I often yearn for the runny, rich egg yolk that an over easy egg provides. That said, I don’t always find myself having traditional breakfast food in the mornings; but rather, obscure leftovers instead (because I’m on the run or feeling lazy)…

Cold pizza happens to top my list of delicious leftovers, so I thought I’d bring together the pizza I secretly enjoy subbing for breakfast and the runny egg yolks that I yearn for in the mornings and made some breakfast pizza.

Breakfast Pizza Ingredients

As you’ve seen me do before, I like to leverage ready-made pizza dough from the local pizzeria or the grocery store. Less room for error and it’s just easier.

I decided to make individual pizzas so I could satisfy my indecisive palate and made 4 different combinations:

  1. Sausage, pepper and tomato
  2. Bacon, pepper and tomato
  3. Sausage, kale and goat cheese
  4. Bacon, kale and goat cheese

Just a little mix-and-match action!

The pizzas came out bubbling and melty from the cheese, but the best part was the perfectly.cooked.egg. that provided the runny egg yolk I was looking/hoping for!

Turns out 4 pizzas were too many for both Mirza and I to finish, but I got to try a little bit of each and enjoy the rest (ironically?) for breakfast the next morning.

    I made these again for the second time yesterday! So good!! The kale/sausage/goat cheese one is a favorite.
