There is something a bit whimsical about having breakfast for dinner that I can’t quite put my finger on…
I have always gotten excited when eggs and pancakes and hash browns were an option after 2 in the afternoon. It’s as if you’re doing something you shouldn’t be and getting away with it. (And maybe I’m dramatizing the whole thing, but it all really excites me, so just humor me here!)
Last week I made corned beef hash with a couple of fried eggs and served that up for dinner — twas delicious.
Earlier in the day, Mirza and I went with his cousins to their newly grown farm and we picked through some produce to take home.
I was excited to realize we had about half of the ingredients needed to make corned beef hash — bell pepper, onions, potatoes — as I was planning on making it for dinner most of the day. On the way home, I picked up some corned beef and eggs, looking forward to making this breakfast-inspired dinner!
The combo of browned potatoes and crispy corned beef mixed together with yummy veggies makes for something really tasty, BUT add on a fried egg with a runny yolk and you’ve got yourself something extra special.
It’s a great option for those breakfast-for-dinner kinda nights, as it’s pretty filling.
I actually ended up making this dish again two days later for actual breakfast because I enjoyed it so much — so this is definitely a must try!
