Sometimes I find myself craving little bites to snack on when I’m not hungry enough for an entire meal.
To satisfy one of these recent cravings, I whipped up cute little polenta cakes that were griddled and topped with rich and delicious ingredients:
Polenta is a newer food that I’ve been exposing myself to, so I haven’t yet been brave enough to make it from scratch (I hear it’s difficult to perfect). But the precooked polenta is really easy to find in the grocery store — usually in the pasta aisle — and cuts out a lot of prep work/time. Works for me!
This dish is really easy to make and put together, the only “cooking” involved is caramelizing the onions and searing off the polenta.
The griddled polenta is crisped on the outside, soft on the inside, then topped with sweet fig jam, rich caramelized onion, tangy goat cheese and acidic balsamic glaze — the little bites that are created are pure perfection!
This is one of those dishes that looks really impressive, tastes really delicious, yet requires little effort on your part. Make them for yourself — they’re definitely a must try.
