Apple Coffee Crumb Cake Recipe


Apple Cake

  • (1) stick unsalted butter
  • (1) cup light brown sugar
  • (½) cup dark brown sugar
  • (2) large eggs
  • (2) cups all-purpose flour
  • (1) tsp baking soda
  • (1) tsp cinnamon, ground
  • (½) tsp salt
  • (8) oz sour cream
  • (1) tsp pure vanilla extract
  • (2) large apples, peeled and chopped

Crumble Topping

  • (¼) cup light brown sugar
  • (¼) cup dark brown sugar
  • (½) cup all purpose flour
  • (½) tsp cinnamon, ground
  • (4) tbsp unsalted butter, softened

Brown Sugar Drizzle

  • (¼) cup light brown sugar
  • (¼) cup dark brown sugar
  • (½) tsp vanilla extract
  • (2) tbsp water


  1. Preheat oven to 350ºF
  2. Lightly grease a 13 x 9-inch baking dish with butter or cooking spray
  3. In a large bowl, mix the stick of butter and brown sugars until light and fluffy (I did this in my stand mixer, you can use a hand mixer also if you have one handy)
  4. Add the eggs to the butter/sugar mixture and beat until combined
  5. In a separate bowl, combine the flour, baking soda, cinnamon and salt and mix
  6. Add half of the dry ingredients into the wet and mix until just combined
  7. Add half of the sour cream and vanilla and mix
  8. Repeat once more until all dry ingredients and sour cream and vanilla are all mixed into the sugar/butter/egg mixture (do your best not to over mix)
  9. Once combined, gently fold in the chopped apples until the apples are evenly distributed through the mixture (again, do your best not to over mix here)
  10. Pour the cake into the greased baking dish and spread it out to the edges
  11. Set the cake aside to make the crumble topping
  12. In a small bowl, combine all of the ingredients for the crumble topping and mix until it looks like coarse crumbles, almost like sand with some larger chunks
  13. Sprinkle the crumble topping evenly over the cake and bake the cake for about 45-50 minutes until the topping is golden brown
  14. Let the cake cool for about 10 minute, you can make the brown sugar drizzle in the mean time
  15. Combine all the brown sugar drizzle ingredients in a bowl until combined and smooth
  16. Once cake has cooled, drizzle with the brown sugar drizzle and let sit for about 5 minutes to harden just slightly
  17. Serve the cake warm, I like to add a scoop of vanilla ice cream too, and enjoy
