bazooka limon guacamole recipe
ingredients.
- (2) avocados, diced
- (2) garlic cloves, minced
- (1/3) cup red onion, diced
- (1/3) cup fresh cilantro, chopped — plus more for garnish
- (½) cup pistachios, chopped
- (3) oz goat cheese, crumbled
- (1) 14.5 oz can fire-roasted tomatoes, diced
- (2) tsp red chili flakes — or less for less spicy, can do this to taste
- (2-3) limes
- salt & pepper
directions.
- Add avocados to a bowl with salt, pepper, chili flakes and juice from 2 limes (I used about 1 tsp salt and ½ tsp pepper) and mash avoados until mostly smoothed, but some chunks of avocado remain
- Add garlic, red onion and cilantro to avocados and stir until well combined — this will further “mash” the avocados a little more, but try to leave some chunks in there
- Add goat cheese, tomatoes and pistachios to mixture and lightly mix until ingredients are just combined
- Taste guacamole to see if it needs any more salt, pepper or lime juice — season to your tastes, I ended up adding a little more lime juice, but this may vary depending on how juicy your limes were to begin with
- Place guacamole into a serving dish and add more crumbled goat cheese, diced tomatoes, chopped pistachioes and some cilantro to the top for a garnish*
- Serve with tortilla chips and enjoy — if you’re not going to eat right away, place in an air-tight container and cover top of guacamole with plastic wrap to prevent browning, store for up to 1 week
*For an extra special garnish/texture I added fried slices of garlic to the top. I simply sliced a couple cloves of garlic and pan fried them in hot vegetable oil for about a minute until nicely browned. It takes the “bite” out of the garlic and adds a wonderful texture, if you love garlic, def a must try!
