• (1) lb chicken breast strips
  • (¼) cup blackening spice
  • (1) lime, cut in half
  • (½) head of purple cabbage, sliced
  • (1) cup matchstick carrots
  • (3) green onions, chopped
  • (1) small yellow bell pepper, chopped
  • (1) tbsp white wine vinegar
  • (½) cup sour cream
  • (½) cup mayonnaise
  • s&p


  1. Coat chicken in blackening spice and set aside
  2. Heat large nonstick pan over medium-high heat
  3. Add a couple tablespoons of olive oil to the pan and when pan is hot, add chicken strips and cook 2-3 minutes per side
  4. While chicken is cooking, combine sour cream, mayo and vinegar with pinch of salt and pepper in a small bowl
  5. Mix cabbage, carrots, green onion, bell pepper, and sour cream mixture in a large bowl and chill until ready to serve
  6. When chicken is cooked to 165ºF, squeeze some fresh lime juice over top to finish
  7. Plate blackened chicken with some rainbow coleslaw and enjoy!
