BLT Omelette


  • (3) eggs
  • (2) thick bacon slices
  • (1) plum tomato, seeded and diced
  • (½) leek, washed and chopped
  • (1) tbsp cream
  • (2) slices pepper jack cheese
  • (½) tbsp butter
  • salt & pepper


  1. Add bacon slices to a pan and turn heat to medium
  2. Fry bacon, turning frequently, until nicely browned (about 5 minutes)
  3. Remove bacon from pan, drain on paper towel and chop
  4. Crack eggs into a small bowl and whisk
  5. Add cream and a pinch of salt and pepper, whisk to combine
  6. At this point, put a small frying pan over medium-low heat and add butter
  7. Add bacon, tomato and leeks to eggs and stir to combine
  8. After pan has heated for a minute or 2 and butter has melted, pour egg mixture into pan
  9. Allow to cook for about 5 minutes, occasionally tilting pan and allowing runny egg on top to distribute to the sides and cook
  10. Once omelette is almost set, add cheese to the middle of the omelette and fold omelette in half
  11. Allow to cook for a minute or 2 to allow cheese to melt
  12. Slide omelette from pan onto plate and serve
