Cheddar Blueberry Biscuits

  • (1½) cups all-purpose flour
  • (1) cup bread flour
  • (½) cup blueberries, fresh
  • (1) cup cheddar cheese, shredded
  • (1) egg
  • (2) tbsp oil
  • (½) cup water

  1. Preheat oven to 350ºF
  2. Combine flour, blueberries and cheddar cheese in a large bowl and mix well
  3. Add egg and oil to flour mixture and mix until egg is completely incorporated
  4. Add water to dough and mix until dough starts to come together (if you find the dough needs is too dry, add another couple tablespoons at a time until dough forms — you don’t want dough to be too sticky)
  5. Once dough is formed, place on a well floured surface and form into a ball
  6. Roll out dough to a ¼-inch thickness
  7. Using a dog-bone cookie cutter, cut out biscuits and place onto a baking sheet lined with parchment paper
  8. Re-roll scraps of dough to cut out more biscuits, you’ll yield about a dozen if you’re using a larger cookie cutter
  9. Bake biscuits 25-30 minute until nicely browned
  10. Remove from oven and allow to cool, store in an airtight container for up to 2 weeks
