Chicken Parm Balls

ingredients.

  • (1) lb ground chicken
  • (1) cup tomato sauce
  • (2) tbsp fresh parsley, chopped
  • (1) clove garlic, minced
  • (½) cup parmesan cheese, grated + (2) tbsp
  • () cup mozzarella cheese, shredded
  • (1¼) cup panko bread crumbs
  • (¾) cup parmesan cheese, grated
  • salt & pepper
  • olive oil

directions.

  1. Preheat the oven to 375ºF
  2. Combine panko bread crumbs and 1/3 cup of parmesan cheese on a plate and set aside
  3. Combine ground chicken, remaining cheeses, garlic, tomato sauce, parsley, a pinch of salt & pepper in a mixing bowl and combine
  4. Scoop heaping tablespoons of chicken mixture into your hands and roll into a ball
  5. Roll ball in panko bread crumbs mixture until fully and evenly coated
  6. Heat a large sauté pan over medium-high heat with an even layer of olive oil in pan
  7. Once oil is heated, add 4-5 chicken parm balls to pan and cook 2-3 minutes per side until all sides are evenly browned and cripsy
  8. Place browned chicken parm balls on a baking sheet
  9. Bake chicken parm balls for 20 minutes until chicken reaches an internal temperature of 165ºF
  10. Serve immediately over spaghetti (or your favorite pasta) and sprinkle with parmesan cheese and chopped parsley*

*Can also be stored in the fridge for up to 1 week
