Pineapple Mayo:

  • (1) tbsp fresh cilantro, chopped
  • (3) tbsp mayo
  • (2) tbsp pineapple, chopped
  • (1/8) tsp lime zest

Salmon Sliders:

  • (1/3) cup green onion, chopped
  • (1/4) cup fresh cilantro, chopped
  • (1) tbsp chipotle chile in adobo sauce, chopped
  • (2) tsp fresh lime juice
  • (1) lb salmon, skinned and cut into cubes
  • salt & pepper
  • (2) tbsp extra virgin olive oil
  • (8) slider buns
  • green lettuce leaves

directions.

  1. To prepare sliders, add green onions, cilantro, chile pepper and juice in a food processor and pulse until finely chopped
  2. Add salmon and pulse a few times until mixture is well blended
  3. Divide salmon mixture into 8 equal portions and shape into patties
  4. Chill slider patties in refrigerator for about 30 minutes
  5. To prepare pineapple mayo, combine all ingredients in a food processor (or blender) and pulse until well combined
  6. Transfer mayo to a bowl and chill until salmon sliders are ready to be assembled
  7. Heat a sauté pan over medium-high heat with a couple tablespoons of olive oil
  8. When pan is heated, add patties to pan and cook for 2-3 minutes on each side
  9. Assemble sliders by splitting buns, adding a piece of lettuce, cooked slider and a couple teaspoons of mayo
