• (4) eggs
  • (1½) lb potatoes, peeled and chopped
  • (1) bell pepper, chopped
  • (1) large onion, chopped
  • (2) garlic cloves, minced
  • (1) lb corned beef, chopped
  • (2) tbsp butter
  • (2) tsp salt
  • (1) tsp pepper


  1. Set a large pot of water on the stove and bring to a boil
  2. Add potatoes and cook for about 5 minutes until potatoes are fairly tender (you can test this by poking the potatoes with a fork and seeing if the fork easily pierces the potato)
  3. Drain potatoes and set aside
  4. Heat large pan over medium-high heat with butter
  5. When butter begins to melt, add onions, bell pepper and garlic and sauté for 5 minutes until they become translucent
  6. Add potatoes, corned beef, salt and pepper to pan with vegetables
  7. Stir well to combine ingredients
  8. Lightly smash the potatoes in the pan and cook for 5-7 minutes until everything begins to brown
  9. In sections, turn corned beef hash over to brown the other side, cook for another 5-7 minutes
  10. Heat a separate pan over medium heat with a little butter for eggs
  11. Crack each egg into the pan and cook for about 4 minutes for sunny side up eggs
  12. Plate corned beef hash and place 2 fried eggs over hash before serving
