Place pork in roasting pan and roast in oven for (about 10-15 minutes)
Reduce the heat to 350ºF and let pork cook until internal temperature reaches 145ºF (about 15-20 minutes)
Let pork rest for about 10 minutes
Once cooled, slice pork in about 1-inch thick slices
Cut ends off Cuban bread and then cut roll in half (you can make 2 sandwiches per loaf)
Slice each half of bread open to assemble the sandwich
Spread ½ tablespoon butter on each half of the sandwich (1 tablespoon per sandwich)
Next add an even layer of yellow mustard over the butter, on each half of the bread
Layer 4 pickle slices on the bottom half of the sandwich followed by the sliced pork, ham and swiss cheese
Place sandwich on a greased panini press over medium-high to high heat (if you don’t have a panini press, just add the sandwich to a griddle or pan over medium-high heat and use another pan as a weight to press sandwich down)
Press sandwich for 5-10 minutes until the cheese has melted and the bread has turned a light golden, crispy brown
