Tomato Corn Feta Salsa
- (2) ears of corn
- (1) cup tomatoes, diced
- (½) cup feta cheese chunks
- (1) lemon
- salt & pepper
Lamb Meatballs
- (1) lb ground lamb
- (1) egg
- (2) garlic cloves, minced or pressed
- (1) tsp paprika
- (½) tsp turmeric
- (½) tsp cumin
- (¼) tsp red pepper flakes
- (⅛) tsp cinnamon
- (½) cup red pepper pesto
- salt & pepper
- extra virgin olive oil

Tomato Corn Feta Salsa
- Shuck corn and cut corn from the cob into a large bowl
- Add diced tomatoes, feta cheese and juice from one lemon
- Mix ingredients, season with salt and pepper to taste, mix again and chill until ready to serve
Lamb Meatballs
- Add ground lamb, egg, garlic and spices to a bowl and mix well until evenly combined, being careful not to over handle the ground lamb
- Form the meat mixture into meatballs by taking a tablespoon of lamb mixture and rolling into a ball with your hands
- Heat a large sauté pan over medium-high heat and add extra virgin olive oil to pan
- When oil is heated through, add meatballs to pan
- Cook 4-5 minutes on all sides until evenly browned
- Layer red pepper pesto on a plate followed by cooked meatballs and finally top with chilled tomato corn feta salsa
- Serve as is for a simple appetizer or with rolls to make sandwiches
