Tomato Corn Feta Salsa

  • (2) ears of corn
  • (1) cup tomatoes, diced
  • (½) cup feta cheese chunks
  • (1) lemon
  • salt & pepper

  • (1) lb ground lamb
  • (1) egg
  • (2) garlic cloves, minced or pressed
  • (1) tsp paprika
  • (½) tsp turmeric
  • (½) tsp cumin
  • (¼) tsp red pepper flakes
  • (⅛) tsp cinnamon
  • (½) cup red pepper pesto
  • salt & pepper
  • extra virgin olive oil

Tomato Corn Feta Salsa

  1. Shuck corn and cut corn from the cob into a large bowl
  2. Add diced tomatoes, feta cheese and juice from one lemon
  3. Mix ingredients, season with salt and pepper to taste, mix again and chill until ready to serve

Lamb Meatballs

  1. Add ground lamb, egg, garlic and spices to a bowl and mix well until evenly combined, being careful not to over handle the ground lamb
  2. Form the meat mixture into meatballs by taking a tablespoon of lamb mixture and rolling into a ball with your hands
  3. Heat a large sauté pan over medium-high heat and add extra virgin olive oil to pan
  4. When oil is heated through, add meatballs to pan
  5. Cook 4-5 minutes on all sides until evenly browned
  6. Layer red pepper pesto on a plate followed by cooked meatballs and finally top with chilled tomato corn feta salsa
  7. Serve as is for a simple appetizer or with rolls to make sandwiches
