Mini Caramel & Chocolate Apples Recipe

ingredients.

  • (9) mini-sized apples, washed and stems removed
  • (5) oz caramel cubes
  • (1) tbsp heavy cream
  • (3) oz dark chocolate, chopped
  • (1) tbsp vegetable oil
  • (9) lollipop sticks — you can find them at the craft store!

Optional Toppings

  • Rainbow sprinkles
  • Sea Salt
  • Chopped walnuts
  • Crushed Peppermints
  • White chocolate chips, melted
  • Peanut butter chips, melted

directions.

  1. Insert lollipop sticks into tops of apples (about a quarter of the way) and set aside
  2. Fill small pot halfway with water and place over medium-high heat, bring to a simmer
  3. In a small sauce pan or bowl, add chocolate and vegetable oil*
  4. Place sauce pan or bowl of chocolate over pot of simmering water (i.e. your makeshift double boiler) and stir until chocolate has melted** — if you find the chocolate is too thick when melted, add a little more vegetable oil until you reach the right consistency (oil, not water)
  5. Set chocolate aside to cool while you melt caramels
  6. Add caramels and heavy cream into a small sauce pan and place over the pot of simmering water (you may need to add more water if the water level is getting too low, use your discretion)
  7. Stir until caramel has melted and thin enough for dipping apples– if you find the caramel is too thick when melted, just add a tablespoon of water at a time until it is the proper consistency (water, not oil)
  8. Dip 4 of the mini-apples in the melted caramel and set on wax or parchment paper
  9. Decorate your caramel apples before dipping the chocolate ones (I made the mistake of dipping the chocolate apples first and then the caramel had hardened enough that anything but the melted chocolate didn’t really stick to the caramel apples) Get creative!
  10. Dip the remaining 5 apples in the melted chocolate and set on the wax or parchment paper
  11. Decorate the chocolate apples any way you like — drizzle with some white chocolate or peanut butter chips, sprinkle with sea salt or sprinkles — or any other toppings you really enjoy!
  12. Allow apples to set in refrigerator for at least an hour before enjoying

*Don’t allow any water to be in sauce pan/bowl before you add chocolate and/or during the melting process or your chocolate will seize and it will be a big clumpy mess that will make you frown : (

**You can also melt the chocolate in the microwave — microwave bowl of chocolate in intervals of 10-15 seconds until chocolate is melted
