• (2) peaches, chopped
  • (2) slices of bacon
  • (10) oz baby arugula
  • white dijon vinaigrette ((¼) cup white wine vinegar, (1) tbsp dijon mustard, (1) shallot – minced, pinch s&p, (½) cup extra virgin olive oil)


  1. Add bacon slices to pan and place over medium-high heat
  2. Cook bacon about 2 minutes per side, or until crisped and browned
  3. Remove from pan and place on paper towel to drain
  4. Dress arugula with vinaigrette and toss to combine
  5. Chop bacon into small pieces
  6. Plate dressed arugula and top with chopped peaches and bacon
