- (2) peaches, chopped
- (2) slices of bacon
- (10) oz baby arugula
- white dijon vinaigrette ((¼) cup white wine vinegar, (1) tbsp dijon mustard, (1) shallot – minced, pinch s&p, (½) cup extra virgin olive oil)
directions.
- Add bacon slices to pan and place over medium-high heat
- Cook bacon about 2 minutes per side, or until crisped and browned
- Remove from pan and place on paper towel to drain
- Dress arugula with vinaigrette and toss to combine
- Chop bacon into small pieces
- Plate dressed arugula and top with chopped peaches and bacon
