Pretzel Bread

Pretzel Bread

  • (1) cup 2% milk
  • (½) cup water
  • (¼) cup light brown sugar
  • (2) tbsp honey
  • (1) packet active dry yeast
  • (2) tbsp unsalted butter
  • (3) garlic cloves, grated
  • (3) cups all-purpose flour, plus more for dusting
  • (1) cup bread flour
  • (½) cup baking soda
  • kosher salt or sea salt

Honey Mustard Butter

  • (6) tbsp salted butter, room temperature
  • (2) tsp whole grain mustard
  • (1) tsp honey
  • pinch salt

Pretzel Bread*

  1. In a small saucepan, heat milk, water, sugar and honey to 105-110ºF
  2. Add mixture to the bowl of a stand mixer and sprinkle the yeast over the mixture
  3. Wait 10-15 minutes until the yeast blooms
  4. In another saucepan over medium heat, add the butter and garlic and cook for about 2 minutes
  5. Combine all-purpose and bread flour into a mixing bowl
  6. Add the flour mixture to the stand mixer bowl with the yeast
  7. Next, add the melted garlic butter
  8. Turn on your stand mixer with the dough hook attachment to medium speed until the dough has come together and pulling away from the sides of the bowl (about 3-5 minutes)
  9. Line 2 baking sheets with parchment or wax paper and set aside
  10. Once dough is ready, turn the dough out onto a lightly floured surface and form into a ball
  11. Cut into 4 equal pieces, then cut those in half to form 8 equal pieces, and cut those in half once more so that you have 16 equally sized pieces of dough
  12. With your hands, roll each piece into a ball and place on the prepped baking sheets
  13. Cover dough with a dish cloth and let them rest in a warm place for 12-15 minutes
  14. Once rested, lightly flour your work surface again and roll the balls gently (use a pastry cutter to help dough come off paper if it seems a little sticky) into a log shape — honestly you can roll them into balls to make dinner roll shapes or the log shape to make more of a breadstick — it doesn’t matter, be creative, it will still be delicious!
  15. Place the dough back onto the baking sheets, cover with dish towel and place back in a warm spot to rest for another 30 minutes
  16. Preheat your oven to 425ºF with one oven rack low and the other high in the oven
  17. Bring 8 cups of water to a boil in a large pot and then add the baking soda
  18. Gently pull the paper/dough from the baking sheets and re-line with parchment paper
  19. In batches, place the dough in the boiling water and cook for about 30 seconds-1 minute on each side
  20. Remove dough using a slotted spoon and place onto the prepped baking sheets
  21. Sprinkle the dough with the kosher or sea salt as they come out of the water to help the salt adhere
  22. Cut 3 diagonal slits on top of the bread, just not too deep
  23. Bake for 6 minutes on the top rack then rotate and bake for another 6 minutes on the bottom rack of the oven
  24. Serve warm with honey mustard butter

Honey Mustard Butter

  1. Combine all ingredients in a bowl and mix well
  2. Keep at room temperature until pretzel bread is ready so it is easy to spread
