  • (¾) lb linguini
  • (¾) lb shrimp, peeled and deveined
  • (2) tomatoes, diced
  • (2) broccoli crowns, chopped
  • (1) stick butter
  • (1) orange, juiced (about ⅔ cup) and zested
  • (2) garlic cloves, minced
  • (1) tsp cornstarch
  • (¼) parmesan cheese, grated
  • (⅔) cup basil, chopped
  • (⅔) cup parsley, chopped

directions.

  1. Bring a large pot of water to a boil for the pasta
  2. Once the water is boiling, add a generous amount of salt to the pot and then drop the pasta for about 8-10 minutes
  3. With the pasta cooking, heat a large saucepan over medium heat
  4. Add the butter to the pan and allow to melt
  5. Once the butter has almost completely melted add the garlic, orange juice, orange zest, and (1 tsp) salt & (½ tsp) pepper and allow to cook for a minute or two, stirring occassionally
  6. Next, add the teaspoon of cornstarch to thicken the sauce, whisk the sauce constantly for a minute until there are no lumps, the cornstarch has completely integrated and the sauce has thickened a bit
  7. Check the sauce for seasoning and add salt or pepper to your liking
  8. Add the broccoli and shrimp to the sauce and stir
  9. The pasta should be about ready at this point, check to make sure that it is, and once it is drain the pasta and immediately add to the saucepan
  10. Once all the pasta has been added to the pan, stir it around to completely coat the linguini in the sauce and turn the heat to low (NOTE: don’t worry if the shrimp isn’t fully cooked yet, it does not take shrimp long to cook so they will finish cooking in the next couple minutes in the hot pasta and while the pan is still heated, just didn’t want you to think you couldn’t add the pasta to the pan before the shrimp was cooking — because I did and you can)
  11. Finally, add the fresh herbs, diced tomatoes and about half of the grated parmesan cheese to the pan and stir until well combined, then remove from the heat
  12. The shrimp should be fully cooking by this point, once that is ensured, plate your pasta in a large serving dish and sprinkle with the remaining parmesan cheese before serving
