• (2) 4 oz steaks
  • (1) tbsp butter
  • (1) lb potatoes, diced
  • (1½) tsp chili powder
  • (1½) tsp paprika
  • (1) tsp salt
  • (½) tsp pepper
  • (3) tbsp extra virgin olive oil
  • (1) bunch of kale, washed and chopped (remove the ribs from the leaves)
  • (2) garlic cloves, diced
  • (1) lemon
  • (¼) water


  1. Preheat the oven to 375ºF
  2. Place the diced potatoes on a foil-lined baking sheet
  3. Sprinkle with spices and extra virgin olive oil and then use your hands to mix it all together so the potatoes are coated evenly with oil and spice
  4. Place potatoes in the oven and cook for 25 minutes
  5. Give the potatoes a shake to move them around and avoid them burning, place back in the oven
  6. Place two pans over medium high heat with about two tablespoons of extra virgin olive oil in each pan
  7. Salt and pepper steaks generously, when pan is hot place steaks in pan for about two minutes (if the steak is less than an inch thick, sear for only a minute, rather than two)
  8. Add the diced garlic to the other pan and allow to cook until fragrant (about a minute)
  9. Add chopped kale to the pan with the quarter cup of water, stir, and cover with a lid
  10. Flip the steaks and cook on the other side for another two (or one) minutes, then transfer into the oven with the potatoes
  11. With the steaks cooking in the oven, after the kale has been covered for about five minutes, you can remove the lid and stir the kale
  12. Salt and pepper the kale, squeeze the lemon juice over the pan, and allow to keep cooking until liquid has almost evaporated, stirring occasionally
  13. After the steaks have been in the oven for about five minutes and your meat thermometer reads 140ºF (for medium-rare steak — see other temperatures below), remove from pan and transfer to a board or plate to rest and cover with aluminum foil to keep warm
  14. While steaks rest you can take potatoes out of the oven and allow to cool a little
  15. Once steaks have rested for about ten minutes, transfer to plate with potatoes and kale, feel free to plate the steak without slicing

      • Medium Rare = 140ºF
      • Medium = 150ºF
      • Medium Well = 160ºF
      • Well Done = (if you must) 170ºF
