Stuffed Cheeseburger & Carrot Fries


Stuffed Cheeseburger

  • (½) lb ground beef, 85% lean
  • (½) lb ground sirloin
  • (1) onion, grated
  • (4) oz pepper jack cheese — I cut from a block of pepper jack, didn’t use slices
  • (2) tsp paprika
  • (2) tsp chili powder
  • (1) tsp adobo seasoning  — or you can just use any seasoning salt
  • (1) tsp garlic powder
  • (!) tsp dried oregano
  • (1) beefsteak tomato, sliced
  • (1) oz baby spinach
  • (¼) cup thousand island dressing
  • (4) burger buns

Carrot Fries

  • (1) lb carrots, peeled
  • (¼) cup extra virgin olive oil
  • (2) tsp salt
  • (1) tsp pepper


  1. Preheat oven to 425ºF
  2. While the oven preheats, slice the carrot sticks into french fry sized slices and place in a large bowl with extra virgin olive oil, salt, pepper, and any spices you may enjoy
  3. Toss the carrot fries until they are evenly coated in the oil and spices
  4. Lay the carrot fries on a baking sheet in one even layer so there’s no overlap (you may find you need a second baking sheet to make this work)
  5. Place the carrots in the preheated oven and bake for about 20 minutes, tossing them about halfway through the baking time
  6. While the carrots are baking, place the ground beef and ground sirloin into the same bowl you used for the carrots — I mean, no sense in dirtying 2 bowls! — and add the grated onion and spices
  7. Use your hands to mix the ground beef with the onion and spices until it’s evenly mixed together, try not to overwork it too much
  8. Once the beef is mixed, split it into 4 portions and then split those portions in half, so you should have 8 even portions (since we’re stuffing the burgers with cheese we’ll need 2 portions per burger for the bottom/top of the cheese)
  9. Take one of the portions of beef and form into a round patty that is just slightly thinner in the middle of the patty than the edges
  10. Add 1 ounce of the cheese to the center of the burger
  11. Using a second portion of the beef, form a second round patty and place it on top of the other beef patty that has the cheese in the middle
  12. This will create one larger burger patty that is now stuffed with cheese! Be sure to pinch the edges of the burger so that the chess is completely inside the burger and there are no spaces between the two patties
  13. Repeat this for the remaining 6 portions until you have a total of 4 burger patties
  14. After you wash your hands, this would be a good time to toss those carrot fries and see how they’re doing
  15. Okay, back to the burgers, place a large nonstick pan over medium-high heat and add a little butter or oil to the pan
  16. Once the pan is hot, add the burgers and cook them about 4 minutes per side (you may start to see some cheese ooze out, that’s okay, yummmmm)
  17. While the burgers are finishing cooking, check on the carrots and if they are done remove them from the oven and cover with foil to keep warm
  18. Toast the buns if you’re into that and add about a tablespoon of thousand island dressing to the bun
  19. Place a finished stuffed cheeseburger on the bun and top with a sliced tomato and some baby spinach
  20. Serve with carrot fries and enjoy!
