Whenever I’m craving a good salad I impress myself.
I guess I’m impressed because normally, it’s the foods that are bad for you that one craves: chocolate, french fries, pizza, burgers, ice cream, etc, etc, etc. So, when I find myself in the mood for a yummy salad, I pat myself on the back for craving something remotely healthy (depending on the dressing I choose and the amount I use…but I digress) and hop to it!
There are a few salad recipes I keep in rotation for when I have these healthy hankerings. This past weekend I had one of those “I’m craving a good salad — yayyyy self” moments, so I decided to make a spinach salad that I like to keep in said rotation.
Making salad dressing from scratch is usually pretty easy, so I find myself doing it quite often. The balsamic vinaigrette that dresses this salad is only a few ingredients and super simple to make — you just combine it all and shake, shake, shake! Now you have balsamic vinaigrette.
One of the reasons I decided to make this salad was that I already had some grilled chicken and dried cranberries on hand. So, I ran to the store to get the few other ingredients and was all set to go! (Side note: I usually use goat cheese in this salad, BUT I feel like I’ve been favoring the goat cheese a little much lately, so I went with blue cheese instead this time around).
There’s virtually no cooking involved, unless you don’t already have the chicken (assuming you want chicken in the salad) and you want to make the crispy shallots from scratch like I did. Even so, easy peasy.
I just love the combination of flavors in this salad; they strike such a great balance. With the leafy spinach, sweet dried cranberries, crunchy toasted walnuts, rich salty blue cheese, perfectly cooked chicken, crispy shallots and tangy balsamic vinaigrette — every bite will make your taste buds happy!
This salad, to me, is an oldie but a goodie. Add it into your salad rotation and you might start craving it and impressing yourself too!
