Well helllllo there!!
Sorry I haven’t written anything in over a week (womp womp). I have been a busy bee and am currently in London (for the first time ever!) on vacation, so there’s been a bit of jet lag and a variety of other excuses you haven’t heard from me, but just know that I’ve been dying to get this post up for you and am excited to be sitting here writing.
A couple of weekends ago, I woke up to a rainy, chilly morning that caught me a little off guard. Immediately I craved warm tomato soup to nip the chill in the bud.
Tomato soup is super easy to make, which makes this comfort food that much more exciting to cook from scratch.
- Melt some butter (a great way to start most dishes)
- Add chopped onion, carrot and garlic
- Cook until soft and translucent, then add a bay leaf
- Pour in a can of whole, peeled tomatoes
- Pour in a couple of cups of chicken broth and bring to a boil
- Blend the soup until a smooth consistency (or any consistency you like for that matter)
- Still blending….
I added a bit of half and half to my finished soup for a touch of silkiness that played well with the bright tang of the tomatoes. You can add more if you like it extra creamy, or none at all if you so please.
I should admit now that by the time I decided to make the soup the rain had cleared and the day warmed up to the point where soup probably wouldn’t be your meal of choice. However, when I tried a sip of the soup, it made me really happy and I didn’t care in the slightest that it was 70+ degrees outside.
Since I was having this for a late lunch, I made a quick grilled cheese to go with soup and indulged in some delicious comfort!
